I however did make meatballs and they were...hmmm...scrumptious!!!

I love to cook and bake. I have a hard time following recipes though...I like to add my own little twist here and there. Sometimes I even make up things...I know poor husband and girls.
Hey they never complain...
maybe my husband has taught them well :)
Lynn's Homemade Meatballs
3 ground meat mixture - pork, beef, veal (I've also done this with chicken and turkey meat)
fresh parsley (about 1 tablespoon)
fresh basil (4 - 5 large leaves)
2-3 cloves fresh garlic
onion (1/2 small onion)
sprinkle Parmesan (add to taste)
Italian bread crumbs
1-2 egg
salt to taste
pepper to taste
oregano to taste
Blend the meat in medium bowl. Chop the parsley and basil finely add to bowl of meat, chop the garlic and onion finely add to bowl, add the amount of Parmesan you'd like (I usually add about 3 or 4 tablespoons), add bread crumbs (about 1/4 cup), add eggs, add your salt, pepper and oregano. Mix all with your hands.
Roll into balls. I usually do them about golf ball size. Heat just enough Extra Virgin Olive Oil to coat pan with just a little more. You don't want to submerge the meatballs.
Preheat oven to 350 degrees.
Fry nice & crispy and flip. Once they are cooked on both sides, put into a pan. I usually put them in the oven for about 15 minutes to ensure the inside is cooked thoroughly!!
Sometimes I double my recipe and put into the freezer all rolled into balls so I can just grab and fry :) So easy on a day you are running low on time.
I serve over pasta and my homemade red sauce with a nice salad and garlic bread!! And, in true fashion I forgot to take a picture once they were all ready to eat.. Seriously don't blame me...I had hungry little bellies to feed.
