Red Sauce to go with those meatballs

My meatballs seem to have been a hit.  They are so yummy and truly easy to make. 

So now I am providing my red sauce recipe.   Sorry I don’t have pictures to go with the recipe!

Lynn’s Red Sauce Recipe 
(INGREDIANTS FOR 1 LARGE POT)

2 – 3 Bone-In Pork Chops
1 medium Onion
1 large Green Bell Pepper
2 – 3 Garlic Cloves
Parsley to taste
Basil to taste
Oregano to taste
4 large cans Crushed Red Tomatoes
2 cans Tomato Puree
Salt & Pepper to Taste

I try to use fresh herbs when possible. 

In large pot cook pork chops in extra virgin olive oil (just enough oil to cover bottom of pot).  Salt & pepper to taste.  I cook until they are completely cooked.

While pork chops are cooking.  Cut onion and bell pepper in slices.  Mince garlic cloves.  Add all to pork chops when they are about ½ - ¾ ways done cooking. 

Chop Basil, Parsley, oregano set aside.

Once Pork Chops are cooked add crushed tomatoes and puree and all herbs.  Bring to a boil.  Once the sauce is boiling I simmer on low covered with a little breathing room for about 3 – 4 hours stirring occasionally. 

Taste to see if you need a little additional salt or pepper.  Remember that the pork chops add a little salt.

**When I say to taste for the herbs, it is because some people don’t like a lot of the herb taste of certain ones.  We tend to like a little more basil and oregano with a little less parsley. 

I double sometimes triple the recipe and put into containers to freeze.  I also use to make lasagna to freeze for fast and quick meal options!
